As
a successful restaurateur for over 20 years, there are moments
that you will always remember.
One such moment was the day that food critic Simon
Wilkinson patronised my restaurant, describing the
calamari rings from his meal as "so tough he could flick
it around the room like an elastic band"! In the same week
I observed a child very nearly choke on a similarly tough calamari
ring!
I decided to research a healthier,
safer calamari alternative.
